GRAPE VARIETIES : Sauvignon Blanc, Viognier, Semillon.
SOIL : Clay and limestone.
VINIFICATION : Grapes harvested in the morning. Direct pressing for the three grape varieties, then co-fermentation in Demi Muid under temperature control.
Aged for 4 months in Demi Muid, including 3 months on fine lees with stirring of the lees 3 times a week.
TASTING : This wine has sparkling golden highlights. It expresses notes of candied fruit enhanced by mineral and woody notes on the finish.
PAIRINGS : Fish à la plancha, lobster or cheese platter.
SERVING : 10-12°C
