GRAPE VARIETIES : Pinot Gris , Sémillon
TERROIR : Limestone
VINIFICATION : Grapes mainly harvested in the morning. Free-run juice for the Pinot Gris followed by cold maceration. Direct pressing for the Semillon. Co-fermentation of the two grape varieties in temperature-controlled French oak demi-muids. Aged for 4 months in the same Demi Muid, including 3 months on the lees with 3 stirring of the lees per week.
TASTING : A delicate nose of candied lemon zest, white peach and sweet spices. Elegant and charming with notes of stone fruit, strawberry and royal jelly. A long, crisp finish with aromas of toasted brioche.
PAIRINGS : Duck, sweet and sour sauces, blue cheeses, lemon meringue pie or fruit salad.
TO SERVE : 10-12°C
