WINEMAKING: We obtain this wine naturally light in alcohol thanks to several specific winemaking stages. First of all, we choose the plots of Pinot most suitable for this type of wine. Picking is carried out earlier in the season, from the beginning of August. Thanks to these early harvests, the grapes, less rich in sugar, then produce a wine with a lower alcohol content. During a short skin maceration, the juice takes on a beautiful pale pink color. Another feature, for the alcoholic fermentation, we chose specific yeasts whose sugar/alcohol yield is low. Finally, the cuvée reaches its equilibrium thanks to malolactic fermentation, then gains in complexity during aging on fine lees. The foam intake brings a delicate effervescence.
TASTING NOTES: This effervescent rosé presents a dress of a bright and limpid color, presenting regular fine bubbles. The nose expresses delicate notes of wild strawberry, gooseberry and rose petals. On the palate, the bubble is light, bringing vivacity and freshness. The wine is lively, harmonious and refreshing, marked by a delicate freshness and a fruity and elegant finish.
FOOD PAIRINGS: Ideal as an aperitif, it perfectly accompanies a shrimp salad, a salmon carpaccio, summer grills or even a tart with sun-drenched vegetables. It will go perfectly with a red fruit pie.
