WINEMAKING:
Each plot is carefully selected based on the terroir best suited to crafting our 0.0% cuvées. Harvesting takes place very early in the season to preserve the vibrant character of the beautiful Cinsault and Syrah grapes from the estate. Picked at night to maintain freshness, the grapes undergo meticulous sorting. A brief cold skin maceration extracts the most delicate compounds and imparts a pale pink hue, followed by direct pressing and pasteurization to preserve the musts.
This is followed by a complex blending process, structured with an infusion of grape seeds, yeast extract, and French oak, giving our cuvées balance, depth, and distinctive character.
TASTING NOTES:
This wine displays a bright robe with elegant golden highlights. The nose is vibrant, revealing aromas of white flowers. On the palate, it is indulgent, evolving towards a beautifully fresh finish.
FOOD PAIRINGS:
Perfect for any occasion, from aperitif to dessert. This cuvée pairs wonderfully with summer salads, tuna tataki, Mediterranean cuisine, sushi, and fruit tarts.
